Amaranth – the modern superfood

Although amaranth is sometimes described as the cereal of the 21st century, it is actually one of the oldest cultivated plants. Its growing popularity has to do with its exceptional nutritional and taste qualities. For centuries, it has been the staple diet of North American Indians.

As a valuable source of many important elements, the cereal will be useful not only for those who need to follow a gluten-free diet. Amaranth is a major source of iron (it contains five times as much iron as spinach), easily digestible protein and starch. More than any other cereal, it is rich in fibre, zinc, potassium and phosphorus as well as essential fatty acids. Including it in the diet is especially beneficial for people who suffer from anaemia, skeletal disorders and diabetes.

The nutrients present in amaranth improve the efficiency of the immune system (impacting lymph nodes and adrenal glands) and support the treatment of inflammations and allergies. Its seeds have a positive influence on the treatment of circulatory system diseases, improve the workings of the digestive system and slow down the process of skin aging thanks to the presence of a valuable compound: squalene. It is a component of the skin’s “lipid layer” that protects it from the adverse influence of UV rays and facilitates the removal of harmful xenobiotics from the body.

Due to its great popularity, amaranth is now grown almost everywhere in the world, especially in North and South America, Southeast Asia and Africa. In Poland, this pseudo-cereal, as it is known among botanists, is grown in the Lublin region. The food industry uses its light brown seeds. Interestingly, when growing, amaranth absorbs twice as much carbon dioxide as other plants.

The cereal is available in Poland in the form of flour and seeds or expanded as the so-called popping. People on a gluten-free diet use amaranth flour to bake cakes as it gives the dough a good consistency and a nut aroma. It is used to make pastas and added to bread mixes, soups, sauces and salads. Amaranth seeds taste great as an addition to yoghurts and muesli.
